Salads galore!

A nice cool salad can beat the summer heat. Savour the flavours of summer with this vibrant, refreshing citrus salad. Fresh and light, it is perfect for lunch or dinner. This salad is delicious and healthy and so easy to make that even kids can have some fun in the kitchen! You can add pomegranate seeds or sweet limes wedges for added colour and flavour.

What will I need?

2 oranges, cut into segments

3/4 cup walnuts halves, toasted
3 cups mixed salad greens
1/2 cup sliced onion
1/4 cup crumbled goat cheese
1/4 cup olive oil
2/3 cup orange juice
1/4 tsp salt
1/4 tsp pepper
2 tbsp balsamic vinegar

How is it done?

Toast the walnuts in a pan over medium heat for 5 minutes until lightly browned. In a large bowl, mix the salad greens, orange segments, sliced onion and walnuts. In a large glass jar with a lid, mix olive oil, orange juice, vinegar, salt and pepper. Shake vigorously to mix well. Drizzle the dressing over the salad mixture. Add the goat cheese and toss. Adjust the seasoning to taste and serve.
